Sour cream (or soured cream )is an acidictasting cream equivalent to unpasteurized cream that has turned .

酸奶油是酸的乳脂和等量的奶油混合。

酸奶油現今用巴斯德殺菌,且利用乳酸菌發酵。

cultured ”and “acidified”sour cream are slightly different.

人工養殖酸化的酸奶油有些微的不同。

Cultured sour cream is homogenized pasteurized cream that is soured with streptococcus lactis at 71(22) until the level of acidity reacses at least 0.5.

人工養殖酸化的酸奶油中的油脂粒均勻分布,巴斯德消毒後的奶油,用乳酸鏈球菌產酸,溫度在71(22),直到酸度至少抵達0.5%。

acidified sour cream is pasteurized cream that has been soured with bacteria that produce lactice acid .

被酸化的酸奶油,會因為細菌的關係,產生乳酸。

the cream is left to ferment for 12 to 14 ours, much like yogurt ;

奶油需要發酵1214個小時,像優格一樣。

it is some times stabilized with additives ( gelatian , sodium alginate , carrageen )

有時候也需要加一些添加劑使它穩定(果膠、褐藻酸鈉、海藻)

and may contain milk solids or whey buttermilk , and salt .

也許包含牛奶或白脫牛奶乳清,和鹽。

 it is thicka , uniform , and smooth .

它是始終不變的、均勻的、光滑的。

Sour cream can be made at home by adding 2 tablespoons of buttermilk to 2 cups of fresh creamand allowing the mixture to sour at room temperature ,

酸奶油可以在家製作,藉著添加2湯匙白脫牛奶2杯新鮮奶油中,在室溫下混合發酵。

without disturding it, for at least 24 hours .

靜置24小時。

this cream will keep for 3 days in the refrigerator.

酸奶油在冰箱內可保存3天。

and reheat it gently without allowing it to boil,

Storing

sour cream can be refrigerated for 2 to 3 weeks .

酸奶油可在冰箱中保存二到三

it should not be frozen because it will separate when defrosted .
